You have to have your fish in the "Rec Tank" in order to put them in a race. Once you've picked your fish, you choose the class you want them to take part in. Potatoe Cake lowers weight as well. The best thing to do, if you want to win, is just max out the Boost, Stamina and Endurance, since that determines how fast and how long you'll be able to go that fast, and prepares you just incase anyone hits you at the beginning of the race.
Since your maxed out with all those stats, you won't have to worry about fighting the other fish ergo no need for strength or tenacity because you'll be too far ahead of everyone to care. I'm not an expert on the subject though I do have 4 fishes with their important stats capped , but the fishes' species, gender, size and weight doesn't matter, as far as I can tell.
